In my ongoing love-hate relationship with social media, here’s one thing I love: If you’re patient enough to outmaneuver the armies of trolls, and avoid stepping in the political muck, you can discover some of life’s great treasures, and even accomplish great things. 

Just ask Nick Vouras, who has leveraged the viral buzz about his saucy pizza pies into a rapidly growing phenomenon in Greater Wilmington and the Brandywine Valley. Not too long ago he began chasing his pizza dreams as a pop-up operation in local restaurants, and the online fanbase soon rallied behind him, eagerly following his wandering journey. Nick's Pizza - Traditional

Now, Nick has just opened his first honest-to-goodness sit-down place – Nick’s Pizza Parlour & Bar in the North Wilmington ’burbs. The background buzz has now turned to a rousing cheer. The strip-center location is already swarming with excited, clearly ravenous fans, and Reddit is gushing shamelessly: 

  • “I want them to immediately open four more locations,” one well-fed fan demands. 

  • “Their cheesesteaks are the best in Delaware (this is not up for debate),” warns Sea_Statistician_312. 

Even a newly relocated Brooklynite was blown away, declaring that Nick’s Neapolitan is as good as top-tier New York City pies. “Pretty handily the best pizza in the area,” Professional_Bus4927 raved. “He clearly did a lot of R&D on dough fermentation.” 

Nick also did a bit of R&D on regional classics and tasty tweaks: Most definitely check out a local favorite, the cheese-less, all-sauce square Tomato Pie. There’s also a Neapolitan with sesame seed crust, a Detroit-style beast, and the simple perfection of the Grandma Pizza, beloved on Long Island for its olive oil-crisped crust.

Nick also has widened his repertoire, building out a family-friendly menu along with his surroundings. There are plenty of comforting standbys – fresh salads, sassy wings and Italian-American pasta classics are here, but also some intriguing surprises. Here’s a rare appearance of real-deal carbonara, made faithfully with bucatini pasta, guanciale ham and egg. And check out the “mozzarella” sticks, filled with perfectly gooey Cooper Sharp cheese. 

But it’s clearly the pizza that is a potential game-changer for North Wilmington, and possibly the entire county. Few other places have Nick’s combination of hand-crafted flair, artisanal chops and easygoing local charm. I’m betting Nick just might end up opening those four other locations – just as all those overstuffed fans hope.
